T
he current cocktail culture on the Monterey
Peninsula owes much of its cachet to Restaurant 1833,
whose arrival on the scene in 2011 immediately set the
mixology bar high. For beverage director Ted Glennon
and head barman Michael Lay, the message is clear:
Respect and honor tradition but strive to reinvent
the cocktail through technological advancements,
fresh ingredients and high-end spirits. It's a collaborative environment, with those behind the bar
encouraged to experiment. Not long ago, bar-
tender Asha Reyes approached Lay with an idea
for a cool-climate, holiday-inspired cocktail
called Winter's Beard. "Asha loves bourbon and
was inspired by the holiday spices," Lay says.
"The bitterness and spiciness of the Amaro
Nonino pulls everything together."
