Fandango
Owners Marietta and Pierre Bain
s a restaurateur, Pierre Bain understands his bread and butter. "I know my clientele. They are older
people," says Bain, who has owned Fandango since 1986. "Some day I will pass the torch to someone who can
be trendy and change things. Until then, we are classic, the way people like it." Fandango's dedicated fans love this
familiarity. They love greeting the nattily attired, French-born Bain and hearing his thick accent. They love how his
wife Marietta hugs customers and escorts them to a table in one of the charming rooms reminiscent of a coun-
try inn. They love ordering calves' liver or sweetbreads or cassoulet, and that it tastes the same now as when they
first ordered it 27 years ago. Under the care of this dedicated couple, Fandango exudes Old World warmth and
charm. The rustic Mediterranean-inspired food — from the caviar, escargot and duck a l'orange to the decadent
Grand Marnier soufflé — is comforting, familiar and timeless. Perfect for the bread and butter.
