ignature cocktails normally originate from
behind the bar, not in front of it, but a bar-
tender at Highlands Inn Carmel recognized a
great idea when he heard it. One day when the
gray fog rolled in off Yankee Point and crept up
to the bay windows to dampen the sunset at
the Sunset Lounge, a longtime customer brain-
stormed the ingredients for a boozy apple cider.
Now it's a favorite cocktail any time of year at
this renowned perch above the Pacific. "It's easy
to make and easy to drink," says Food and
Beverage Manager Bastiann de Winter. Order
it on the deck at California Market, inside
Highlands' fine dining restaurant Pacific's Edge
or at the Sunset Lounge. The customer, a local
woman, requested anonymity, but make sure
to raise your latte glass in her honor.
