Called by President Theodore Roosevelt "the most American thing in America," the adult educa- tion movement founded by a Methodist minis- ter in New York hit the shores of Pacific Grove in 1880 with a focus on natural history. The Chautauquatini features dry gin, muddled basil, cucumbers and lime—a concoction dreamed up by Beach House manager (and Kevin's son) Jeremy Phillips. "The botanicals in the gin go well with the basil, and the cucum- ber makes it refreshing," Jeremy says. A com- plement to the drink is the array of old woodcut art showcasing the Chautauquan lifestyle in America's Last Hometown. —Larry Harland P R E PA R AT I O N : Muddle all ingredients in a shaker. Add ice and shake. Strain into a chilled martini glass garnished with cucumber slice. I N G R E D I E N T S : • 3½ oz.
