here are classic cocktails, and then
there are classic cocktails with a twist.
La Playa Hotel's Old Cubana gives new life
to the classic Havana-born mojito by adding
a splash of bubbles. "We're working on a
series of drinks off old classics," says
Manager Bastiaan de Winter. "Most classic
cocktails were invented in historic hotels."
La Playa certainly qualifies, built in 1905
by the Ghiradelli family (of chocolate fame).
The newly restored property's bar draws
a unique mix of guests, tourists and locals.
The bartender tandem of Duncan Llovio
and Jevana Bouquin plan to introduce other
classic libations because, Bouquin says,
"They stand the test of time."

P R E PA R AT I O N :
Lightly muddle mint in bottom of
shaker. Add bitters and other ingredi-
ents (except Champagne), and shake
with ice. Strain into cocktail glass and
fill to top with Champagne. Garnish
with lime and mint sprig.
I N G R E D I E N T S :
• 1½ oz. aged rum
• ½ oz. simple syrup
• ¾ oz. fresh lime juice
• 4 mint leaves
• 2 dashes Angostura bitters
• Splash of Champagne
