Cooking fat is the best medium to extract THC, since the molecules eas- ily bond together when heated. While cooking with edible fats is enjoyable, the process of infusing THC into the fats is a long one and will make your kitchen smell extremely pun- gent. Pre-infused fats are a great compromise for those who want to create their own goodies but skip the infusion process. Jambo Ghee is cultivated from grass-fed cows and a mixture of ghee, coconut oil and cannabis. As a plus, it's shelf stable, so no refrigeration required. A 12-ounce jar contains 200 milligrams of THC, so it's important to dose carefully. Jambo makes the perfect addition as a topper for toast or even steak, or added to any recipe that calls for butter. A versatile ingredient, infused butter like Jambo's really pushes the creative limits of what you can cook. For those who prefer baking or cooking their own edibles over premade products, infused cook- ing oils and butter come in handy. Cooking fat is Hamptons Salt Company Can anything ruin a dish like a lack of salt? Seasoning and tasting at the beginning, middle and end of preparation is the number one tip any burgeoning chef should learn; throwing a bunch of salt on at the end isn't doing you or anyone who will be eating your food any favors. I'm a sucker for flavored salts, because it's a quick way to spice up foods that don't have a lot of flavor—rice, potatoes and popcorn come to mind. I use many kinds of Hamp- tons Salts, and in many of my favorite dishes. The garlic salt, chunky and flavorful, is perfect on top of smashed red potatoes with rosemary. The smoked hickory is for burgers and salmon or anything barbecue. The truffle salt (deliciously funky tasting and not artificial) is the star ingredient in my famous popcorn, mixed with butter, grated Parmesan and fresh ground pepper. And of course, the unrefined cooking salt never leaves its place of honor next to my stove. Be liberal with salt, and everything—even your sweet dishes—will have a richer flavor. Although our last issue featured some of my favorite cannabis products, there's only so much room in this magazine. So here are a few more that you shouldn't miss out on! Papa & Barkley Releaf Soothing Balm Whether you're on your feet in the kitchen or sitting in the office every day, body pains are all but guaranteed to plague you. I often find myself slumped halfway down my chair by the afternoon, which means an achy back or sore shoulders. Advil and Tylenol work, but sometimes I prefer something topical or more holistic. Releaf Soothing Balm is a great product made from coconut oil that has more than 400 milligrams of cannabinoids and a balance of 3:1 THC:CBD that provides a natural treatment for body pains. The company was created after the founder concocted a cannabis balm for his father's back pain, and since then, Papa & Barkley has com- bined science with nature to create an all-natural product line that works. Papa & Barkley also offers a bath soak, massage oil and a transdermal patch. At the end of long day, a small jar of this balm, Netflix and a cool glass of rosé is all I need for pain relief! Derby Bakery Speaking of delicious edibles, Northern California 's Derby Bakery is one of my go-tos for sweet infused goodies. Their Daily Double Peanut Butter Cups taste fantastic without that overly strong cannabis flavor, and are easy to cut into smaller doses if needed. There are also sea salt caramels, toffee cookies and other great desserts, all in well-designed, resealable packaging. Each varies in dosage according to your needs, from 10 milligrams to 40 of a hybrid sativa- dominated THC oil. Beyond their products, Derby Bakery is part of Women Grow and donates to many charities, so you can do good while enjoying your treats. ■cr
