in Saratoga, but hopefully one of the
best small luxury hotels in the North-
east. That's our goal. Saratoga is stra-
tegically located. New York is three
hours away. Boston is less than four
hours away, Montreal is four hours
away. I think we have a great oppor-
tunity to show what we can do. We're
very excited about that."

ucamp had only recently be-
gun work for the Adelphi Hos-
pitality when the company
was presented with the opportunity
of acquiring the established restau-
rant location next door to the hotel.
"We weren't planning on Salt & Char.
There were 16 years left on a 20-year
lease and we said, 'gee, how can we
pass that up?'" Ducamp said. "Mae-
stros left voluntarily and they sold
us the lease. We purchased the lease
with 16 years remaining, substantial-
ly renovated the entire restaurant to
be able to operate it as a luxury steak
house."
Salt & Char opened to great fanfare
last summer before the racing sea-
son, was very successful. It served as
an introduction for Adelphi Hospital-
ity in Saratoga Springs and focused
more attention on the ongoing Adel-
phi Hotel project.
