SignatureMT | 63 THE DETAILS 1. To make pastr y, put f lour, sugar and butter in the bow l of a food processor. Process unti l mi x ture resembles f ine bread cr umbs. With motor r unning add egg yol k and enough water unti l mi x ture star ts to form a bal l. Turn out and shape into di sc. Wrap in plastic w rap and ref r igerate for 20 minutes. 2. Preheat oven to 350F. R ol l out pastr y bet ween t wo sheets of bak ing paper or plastic w rap unti l 1/8 inch thick and large enough to line a 9" pie pan. Press pastr y into pan, tr imming of f any overhang. R ef r igerate for 30 minutes. 3. Pr ick base al l over w ith a fork . Cook for 10-15 minutes unti l golden brow n. Cool completely. 4. Place brow n sugar, cream, 1/4 cup f lour, 1/4 cup maple sy r up in a medium size bow l and w hi sk unti l smooth. 5. Spr inkle nuts in the prepared pie shel l and pour f i l ling over nuts to cover evenly. Bake for 30-35 minutes or unti l just set. Al low to cool completely. 6. Stir together r icotta , powdered sugar, and cinnamon in a medium bow l. Cover bow l w ith plastic w rap. Add hickor y wood chips to the burn chamber for the Brev i l le Smok ing Gun. place hose under the spastic w rap w ith the opening sitting above the r icotta. Turn smok ing f un on HIGH SPEED and ignite wood chips. Sw itch to LOW SPEED and smoke for a few second s or unti l the bow l i s f i l led w ith a dense smoke. R emove hose and reseal plastic w rap. L et inf use for 3 minutes. Thi s step can be omitted. 7. Place ½ Cup maple sy r up in a smal l pitcher. Cover container w ith plastic w rap. Add hickor y wood chips to the burn chamber of the Brev i l le Smok ing Gun. Place hose under the plastic w rap w ith the opening sitting above the liquid. Turn smok ing g un on HIGH SPEED and ignite wood chips. Sw itch to LOW SPEED and smoke for a few second s unti l the pitcher i s f i l led w ith a dense smoke. R emove hose and reseal plastic w rap. L et inf use for 3 minutes, occasional ly sw irling the sy r up 8. If you don't have a smok ing g un, omit thi s step or tr y smok ing the maple sy r up in a smoker. 9. Ser ve tar t w ith r icotta cream and dr izzle w ith maple sy r up.
