4 | t h e c l e v e r r o o t COURTNEY SCHIESSL is a Brooklyn-based wine journalist, educator, and consultant who has held sommelier positions at some of New York's top restau- rants. Her work has appeared in Forbes, SevenFifty Daily, The SOMM Journal, and VinePair, among other publications, and she's currently pursuing the WSET Diploma in Wines. Featured Contributor WHEN I FIRST MET JEAN-CHARLES BOISSET, I couldn't help but be enamored with his smile: the way his lips curled with a corresponding gleam in his eye that was almost imp- ish. Fifteen years later, I'm thrilled to see this renaissance man contribute countless innovations to the wine indus- try and beyond as he ventures forth into the culinary and olfactory realms, as well: Books, gourmet foods, candles, and even perfume now engulf his synergistic lifestyle. I'm thrilled to feature Boisset on our fall cover, as he made quite a colorful muse for our Editors and Art Director! In the pages of this issue, you'll travel with The Clever Root from Paris and Copenhagen to Mexico City as our writers explore international treasures more than worthy of your tabletops. If you're adventurous, you'll take heed of our salute to the "art" of ingesting insects through our new col- umnist's series on an unconventional way to get your daily protein. You'll also continue to learn about the developing world of cannabis through stories examining the trends, brands, and people creating the roadmap for future success—or should I say, greener pastures—in this burgeoning industry. You may not be able to directly experience the aromatics of this issue's featured perfumes, wines, and spirits, nor taste the vivid dishes and smell the aromas of California-grown cannabis, but you're sure to discover many future favorites on the following pages. So sit down, pour yourself something nice, and add to what we hope is an ever-growing wish list of places to eat, drink, and explore. Looking forward to much more in 2019, Meridith May, Publisher LETTER FROM THE PUBLISHER I Believe in Wishcraft Contributors Cal Bingham, Rina Bussell, Randy Caparoso, Emily Coleman, Jeff Cox, Phillip Dobard, Madelyn Gagnon, Christine Havens, Alan De Herrera, Richard Carleton Hacker, Sionnie LaFollette, Melissa Marrapese, Aly Moore, Timothy Murray, Alexander Rubin, Hana-Lee Sedgwick, Craig Sherod, Merrill Shindler, Becky Tsadik, Irene S.
