With a 600 percent increase in people identifying as vegans in the U.S. in the last three years, according to GlobalData, the plant-based food market is expect- ed to reach $5.2 billion worldwide by 2020, according to Innova Market Insights. The top five grocery chains meeting the needs of meatless eaters are Vons, Publix Super Markets, Sprouts Farmers Market, Kroger, and Whole Foods Market, according to inMarket. Kristal Howard, spokesper- son for Kroger, says, "Across the industry, there's an uptick in plant- based foods being commercial- ized and entering the market, and we're seeing more customers look for plant-based alternatives in multiple categories, including meat and dairy, so we're opening up more shelf space." The trend is influencing how Kroger approaches new product development as well. Simple Truth, Kroger's exclusive natural, organ- ic, and free-from brand, has intro- duced new plant-based products, including coconut milk, coconut milk creamer, and meatless patties, and has begun offering Beyond Meat's Beyond Burger last summer, and Beyond Sausage this fall.
