SiG MT 16 URBAN AFFAIRS Working Life S MT Text by Holly Matkin • Photography by Eric Visocan WHERE FARMER MEETS FOODIE F Streatery's gourmet fare has been popping up at community events throughout the Havre area. or Streatery owner Sarah Manuel, the concept of "farm-to-table" isn't a recent idea – it's simply the way she was raised. "I want to know where the food is coming from," she says of the top-notch ingredients she selects for her food truck's menu. "And I like to support the local farming community as a whole." Sarah introduced 43 items during her first season in business this year, using wholesome ingredients sourced from 13 companies and producers stretching from Hinsdale to the Flathead Valley. The grass-fed, organic beef she serves was raised on her family's Prairie Grass Ranch south of Havre, and she hopes to incorporate their organic pork into her gourmet fare in 2019. Having a commercial kitchen on wheels has given Sarah the freedom to pop up at events throughout the area, but she can most often be found outside of Havre's Triple Dog Brewing Company, serving up mouth-watering creations like chicken croquettes, Irish pasties, street tacos, and smoked brisket mac n' cheese. Sarah's "farm-to-table" cuisine is centered around locally-sourced, top-notch ingredients. "Every week we have new specials, and that gives us the freedom to feature the best local ingredients," Sarah says. Even without advertising, catering requests for weddings and other special events have been pouring in. Although northcentral Montana's blustery winters force Sarah to close up shop for a few months, the Streatery food truck will relaunch on St. Patrick's Day, with fan favorites like Irish nachos and bangers and mash. "It's where farmer meets foodie!" Sarah says.
