SiG MT 18 Dawn now aims for 80 percent organic food in her family's diet, and states, "everybody is feeling healthy." e youngest, age 3, was raised on organic food and is the "healthiest of the bunch." e family farm makes this feasible. Faltree Farm includes 20 pigs, 15 or so chickens "for laying and eating" (plus eight new, baby chicks), potatoes, berries, and other fruits and vegetables. Plans call for adding more livestock, opening a gluten-free, nut-free butcher shop, and starting to sell food this summer at local farmers' markets and grocery stores. Husband Nick is instrumental in the farm's growth. "He's an engineer," Dawn says. "It's amazing what this guy can build. And our four kids jump in as well." Dawn sees benefits well beyond the children's physical health; they're receiving an education. "Kids today don't realize where food comes from. ey think eggs come from a grocery store." And Dawn hopes they'll want to continue this lifestyle. "is is a great way to teach how life is supposed to work. You've got to work for your food. Take care of your animals. Looking to the future, Dawn plans to maintain both her physical therapy practice and the farm. "I wouldn't give up either one of them," she asserts. "My love is to help people—with their aches and pains, and orthopedic issues. With organic farming, I help them from the inside out."
