CARAMELIZED ONION AND MUSHROOM FLATBREAD This Caramelized Onion and Mushroom Flatbread recipe is an easy appetizer or can be used as your main dish. You can use store-bought flatbread, refrigerated pizza dough or make my quick easy homemade grilled flatbread. Whichever crust you use, the flavors are spot on and will keep your guests happy! INGREDIENTS: • 16 oz. pizza dough (or store-bought flatbread) • 1 large onion (or two medium) • ¼ cup olive oil plus some for brushing the flatbread • 4 cups mixed mushrooms (I used Cremini, Bella & Shiitake) • 2 cups shredded Monterey Jack cheese • 6-8 sprigs fresh thyme • 3 large garlic cloves • 3 tablespoon sherry wine • 1/8 teaspoon salt • 1/8 teaspoon pepper DIRECTIONS: 1. Preheat oven to 425°F. 2. Add onions, thyme sprigs and 1/4 cup oil to a sauté pan and slowly saute for at least 30 minutes until you get a nicely browned/caramelized color. The thyme will fall off the sprigs so no need to remove it. 3. Add your mushrooms and garlic and sauté for another 5 minutes. 4. Add the sherry wine and let simmer for 2-3 more minutes before taking off the heat. 5. If using pizza dough: Roll your dough out, brush olive oil over the top of the dough and season with salt/pepper. 6. If using store-bought flatbread: Brush olive oil over the top of the dough and season with salt/pepper. 7. Bake dough/flatbread at 425° F for 10-12 minutes or until golden brown. 8. Once your crust is nice and crispy. Remove from oven and spread the mushroom mixture evenly over the top and finish with cheese. Bake 5 more minutes or until melted. Cut into strips and serve warm!
