Q: What do you love to do outside the restaurant? A: Watch sports, eat, drink, sing karaoke, watch movies, listen to music and dance. Q: Describe how you feel when you cook for someone. A: A sense of euphoria and pride, because I know I'm going to give them a piece of me through my cooking. Q: What was your first culinary job? A: At Whole Foods Market as a barista/breadmaker. Q: If you hadn't followed a culinary path, where do you think you would have ended up? A: Probably still a bartender. I'm pretty sure the money is better! Q: If you could choose your last meal, what would it be? A: Filet mignon, foie gras, Australian lobster tail with mushroom ragu and Bearnaise sauce, potatoes au gratin and sautéed asparagus. Carrot-cake cheesecake (with no black raisins). Q: If you could only bring one secret ingredi- ent to a cooking contest, what would it be? A: Black truffles. Q: What is your food philosophy at the Beach House? A: To make people happy so they will come back again and again. Not overly fussy food, just fresh, homecooked, flavorful food. And staying true to who I am. Q: You've worked in nearly every position inside a restaurant. How has that helped you in your career? A: It has helped me to become more empa- thetic to everyone working in the restaurant. I understand all aspects of the kitchen and the front of the house. Q: What's your most guilty junk food pleasure? A: Reese's Peanut Butter Cups. Q: What is your go-to source of inspiration? A: People's happiness and satisfaction. 168 C A R M E L M A G A Z I N E • H O L I D A Y 2 0 1 9 HAPPY HOUR 4:306:30, MONTHURS Unique Selection of Wines Sign up on the Web for our LOYALT Y PROGRAM and earn rewards and discounts 1901 Fremont Boulevard • Seaside, CA 93955 (831) 899-5825 • GustoPizzeriaPasta.com Fresh Pasta Wood Burning Oven Full Bar • To Go Voted Monterey County's Best Restaurant in Seaside!
