But demand spikes as people plan holiday gatherings and relax their purse strings a bit. Get-togethers will no doubt be fewer and smaller this year, but indulgent cheeses will still be on many shoppers' lists, even if only for indulging themselves. "I have seen truffle cheeses in general double their sales in the last five years," says Stephanie Ciano, a top executive with World's Best Cheese, the New York-based importer and distributor. And the number of selections has mushroomed as well.
