Cereal Boxes Speak Up Kellogg Co. is altering its cereal boxes in the U.K., adding technology that will allow more than two million blind and partially sighted people to access important information about ingredients, allergens, and recycling details, at the shelf. In partnership with the free NaviLens app, Kellogg will begin packaging cereal in 2022 in boxes that allow a smartphone to detect an on-pack code from 10 feet away and play back labeling information. Consumers do not need to know exactly where the code is located to scan it. Bringing Noma Home Replicating the flavors created by chef René Redzepi at the renowned Copenhagen restaurant Noma is shifting from aspirational to reality. The Noma Projects' arm of the restaurant will begin shipping its first two garum condiments to home cooks before the new year. Vegan Smoked Mushroom Garum, and vegetarian Sweet Rice and Egg Garum are umami-based sauces inspired by a 1,000-year-old recipe for a traditionally fish-based condiment. Noma's non-fish versions are made with mushrooms and egg whites and brewed in a warm solution of koji rice infused with an edible mold. At the restaurant they're used to enhance soups, sauces, and vinaigrettes. "We know that there is nothing more refreshing on a hot summer day than ice cream. That is why we wanted to combine two of the most iconic comfort foods to create an ice cream with the unforgettable flavor of Kraft Macaroni & Cheese we all grew up with," said Emily Violett, senior associate brand manager for Kraft Macaroni & Cheese, in a statement. "As big fans of Van Leeuwen, we knew they'd be the perfect partner to create this ice cream with us. Not only does it taste delicious, but it's also made with high- quality ingredients and contains no artificial flavors, preservatives, or dyes just like our Kraft Macaroni & Cheese." It's All Good Food production and consumption makes up a quarter of the world's greenhouse gas emissions, according to a report published in Science magazine. To counter those effects, New Zealand-based All Good has introduced its Zero Carbon bananas this year, which join its fair trade and organic varieties. With New Zealanders eating about 86 million bananas a year, this small fruit now can make a big impact. To achieve carbon neutrality, the company shifted sourcing to the El Guabo Association of Small Banana Farmers in Ecuador. These 150 farmers reduce their carbon emissions by incorporating solar power, recycling all on-farm plastic, and using organic fertilizers. All Good's co-founder Simon Coley, observes, "Our impact as consumers has the potential to make a massive change, but that's not going to happen overnight, and we understand sometimes it's hard to know where to start with buying better. That's why we've done this. Now, you can start with a banana." FALL 2021 11
