INGREDIENTS:
• ½ pound bacon cut into small pieces
• 2 dozen Brussels sprouts trimmed & halved
INSTRUCTIONS:
1. Preheat oven to 400°
2. Fry bacon in a skillet over medium-high heat until crispy.
Transfer bacon to a paper towel-lined plate, leaving the grease
in the pan. Add halved Brussels sprouts to a bowl and season
with fresh ground salt and pepper. Toss with 1-2 tablespoons of
bacon grease or olive oil (whichever is desired) and transfer to
a baking sheet, and place in the oven for 30 minutes or until
nicely roasted.
4. While Brussels sprouts are baking, place freshly grated
Parmesan cheese in small mounds on a cookie sheet and
bake at 400° for 7 minutes.
5. When Brussels sprouts are done, remove from sheet pan
and toss with bacon bits. Serve with Parmesan crisps as an
added garnish.
