The Fine Cheese Co. Pearls of Pure Goats' Cheese
ANN-MARIE DYAS, OWNER OF THE FINE CHEESE CO., is always thinking about the perfect cracker
for each cheese she sells. Fortunately for Dyas, the Fine Cheese Co.'s sister company, Artisan Biscuits,
makes crackers to match specific cheeses. If Dyas can imagine the perfect pairing, together they can
create it.
"I was thinking about a cheese that would partner with our new Charcoal Squares," says Dyas,
referring to a butter cracker that contains edible charcoal. The cracker was inspired in part by the
Egyptians and Victorian-era English, who ate charcoal biscuits to aid digestion. "The cheese needed to be soft and
spreadable, and small enough to make a perfect mouthful with the cracker. It also needed to be easy to store and serve
—ready for an impromptu visitor to enjoy with a glass of wine."
Dyas' thoughts drifted to goat cheese. "The French have long preserved goat cheese in herbed oil, but usually
choosing firm, mature specimens that are not to everyone's taste," she explains. But Dyas had come across a British
creamery and cheese company that knew how to marinate fresh goat curd in oil without disintegrating it. She
approached the company and together they developed a small jar containing 11 "pearls" of pure goat cheese in an herb,
garlic and pink peppercorn marinade. The result was a fresh, clean, lemony flavor, and because the pearls are preserved
