Whole Wheat Dark Chocolate Chip
WHEN IS IT ACCEPTABLE TO START referring to someone as a legend?
Southampton, N.Y., residents might say Kathleen King has earned that title
in the 13 years since she opened Tate's Bake Shop in the seaside town. At
the very least, they would argue, the bread pudding, brownies and other
baked goods already qualify.
But it's the cookies that keep people coming back for more. And while
the classic thin, crisp chocolate chip cookie has long been King's signature item, her Whole
Wheat Dark Chocolate Chip version has taken home its second sofi for Outstanding Cookie.
"The texture is similar to our traditional chocolate chip, but the taste is slightly earthier,"
King explains. "I love dark chocolate most of all, and I wanted to have a cookie with whole
wheat because of the interest in whole grains."
Between the retail store in Southampton and the commercial kitchen in nearby East
Moriches, the Tate's team bakes two million cookies every week, including two new
additions to its gluten-free cookie line: Ginger Zinger and Double Chocolate Chip. Like
all Tate's products, these were first marketed among King's favorite testers—her local
