JUST OVER SEVEN YEARS AGO, current Belle Chevre owner Tasia
Malakasis returned to her native Alabama with the goal of making a career
transition from software marketing executive to cheesemaker.
Belle Chevre of Elkmont, Ala., had been around for nearly 20 years,
but Malakasis didn't know about it until she found the cheese at Dean &
DeLuca. "I thought, here's this goat cheese made not far from where I grew
up in Alabama, and it's ranked among the world's best," Malakasis recalls. Her first step was
to intern for Belle Chevre; after just six months, she convinced the owner to sell her the
company. Malakasis says the terroir of Limestone County adds something special to Belle
Chevre cheeses, and that they couldn't be made anywhere else.
Belle & The Bees Breakfast Cheese was created in 2009 when Malakasis began
experimenting with the French tradition of stirring something sweet into fresh goat cheese.
Combining the locally made goat cheese with Savannah Bee Company's Tupelo Honey, the
cheese is all-natural, additive-free and recommended as a replacement for cream cheese.
"Our spread contains less fat and calories than the average cream cheese, and
offers more protein. It even contains probiotics," Malakasis says. Suggested retail price:
