This is how Cal Hancock, owner of Hancock Gourmet Lobster Company, describes the philosophy behind this year's Outstanding Frozen Savory winner. With more than a whole lobster in every package, Old Port Lobster Flatbread is a new approach to enjoying the company's namesake crustacean. "We immerse the large pieces of sweet Maine lobster in our lemon-herb butter, then add lemon zest, parsley and artichoke hearts—just enough to enhance, not hide, the taste of the lobster," Hancock says. "It's then topped with Pecorino Romano cheese. All of this is on a crispy, flavorful flatbread. Perfect for an entree for two or cut into smaller pieces for a tapas party or appetizer for entertaining." The all-natural product is offered as a single flatbread in a retail package, in a case of six for foodservice and in a package of two for mail-order. Hancock's mission is to create products that "wow" consumers. "It has to taste good, look good, and be easy to prepare," she says. "We use only fresh, locally sourced ingredients. Maine lobster is now certified with the Marine Stewardship Council, an eco-friendly and sustainable industry ensuring the preservation of this valuable resource."
