KITCHEN CREATIONS Triple Ale Onion Spread TRAVELING CHEF WARRICK DOWSETT teamed up with his brother, a brewer, to create this savory spread. "It really evolved from a family dinner," Dowsett says. He served it to his father-in-law, whom he describes as "a real meat and potatoes man," and the positive reaction sealed the deal. "If it could satisfy him, then we had an international winner." A mix of three ales from Woodstock Station Brewery—brown, pale, and amber—form the base of the vegan-friendly Triple Ale Onion Spread, which is loaded with caramelized onions and finishes with a hoppy kick. This versatile condiment elevates burgers, barbecue, sandwiches, and stews; it's also a unique complement to cheese plates and baked brie. But Dowsett's philosophy, for all his products, is to experiment. "That's what specialty foods is about for me," he says. "Coming up with a great way for you to go and have fun."
