THE STICKY TOFFEE PUDDING COMPANY
Millionaire Shortbread with Smoked Hickory Sea Salt
LAYERS OF CRUNCHY BROWNED SHORTBREAD, chewy caramel, and
dark chocolate are topped with smoked hickory sea salt in the latest award
winner from Tracy Claros' Sticky Toffee Pudding Company. Despite a long
and challenging production process, Claros says the resulting Millionaire
Shortbread bar speaks for itself. "With this product I was trying to achieve
complex flavors and textures," she explains. "Sweet, salty, creamy, chewy,
and crunchy."
No stranger to sofi gold, Claros won the Outstanding Confection award
last year with her Chocolate Tiffin with biscuits, roasted almonds, and cherries,
but was especially happy to win this year in the cookie category. "We push the
boundaries to bring unique and complex products to the market," she says.
"Because this product was challenging in so many aspects, we are very happy to
