The Backstory… Manis got his start at Fran's Chocolates in Seattle, where he worked for 10 years after attending culinary school. "I learned the business there and the production and managerial pro- cess, but I always had a sense that one day I'd have my own place," he says. In 2006, he and Lindley relocated to Portland, where they saw an artisanal food culture emerging, including a new movement in the world of chocolate. T his cappuccino-colored bou- tique, tucked into Portland, Oregon's trendy West End, is an elegant temple of chocolate deca- dence. Opened in 2006 by Jesse Manis and his partner, Aubrey Lindley, Cacao houses a warm, dark-wood interior featuring shelves of artfully packaged, bean-to-bar chocolates crafted by small producers from all over the world. But it's the extensive menu of drinking chocolates that has distinguished this sweets shop.
