FOOD INCUBATORS GROW At the Summer Fancy Food Show in New York City, Incubator Alley—an aisle of exhibitors who use food incubators to cre- ate their new specialty food products—had a steady stream of visitors. It reflects the popularity of using incubators, and a new way that successful specialty food compa- nies are giving back. In October 2016, Chobani will open a new incubator that supports food startups that want to posi- tively impact the world, while the founder of Krave Jerky has established Sonoma Brands, where he will launch new products and also support early-stage companies. Both offer financial assistance to startups. On the Rocks AC/DC still draws massive crowds at concerts, but it's the band's launch into the beverage market that makes news. Thunderstruck Tequila, a collaboration between AC/DC's licensing and merchan- dising companies Perryscope Productions and Epic Rights, and Fabrica de Tequilas Finos, joins Rock or Bust beer, Hells Bells and Back in Black wine, a bourbon and RTD cola. Available in Silver, Reposado, and Añejo varieties, these three tequilas are made from organically produced 100 per- cent Blue Weber agave at Fabrica's distillery in Tequila, Mexico. FALL 2016 17
