Master Chef Bhupender Singh has created a unique fusion from all his life and kitchen experiences. Describing the food as "high-end modern cuisine with authentic Indian flavors," the former co-owner of Ambrosia in Monterey ser ves the usual suspects (chicken tikka masala, lamb vindaloo) sprinkled with typical California ingredients. Vegetable-rich and vegan-friendly, the menu walks a traditional line yet veers play- fully off cour se at times. Singh's chaat (catch-all word for "snack") is India's answer to a Super Bowl seven-layer dip; avocado, potato, chickpea, pomegranate, yogur t, mint and tamarind (scooped up with spiced wheat crisps).
