"My dream was to introduce people to the food and culture of my homeland," says owner Erkan Demir, a native of Istanbul. Born out of the Ottoman Empire and the sultans who borrowed ingredients from far corners, Turkish cuisine is both exotic and familiar. Those who enjoy food from the Middle East and the Mediterranean will recognize elements — and be surprised at the final result. Ar temis offers a wide variety of mezes (appetizers), including cevizli ezme (blended red pepper, tomato, garlic and walnuts), kizar tma (pan-fried eggplant) and sigara boregi (tightly rolled "cigars" with potatoes and feta cheese). The ever-evolving menu leans on lamb, but Demir plans to slowly add seafood, a staple among Istanbulites. And if you think the mostly-Muslim country eschews wine, think again.
