September/October 2014 27 ➤ Special consideration of stacking height should also be reviewed when evaluating ventilator height, particularly when stacking gas combi ovens, which require transac- tion kits between ovens. Two full-sized 10-pan gas combi ovens can make the height of the top unit challenging in a facility with relatively short employees who can't reach the top pans. ➤ Filters are still required on the incoming water lines, even with the newer boiler and steam generator designs and safeguards. Water should receive comprehensive testing prior to finalizing treatment options so that potential issues may be addressed. Neglecting to do this can result in damage to equipment, loss of investment and voidance of a manufacturer's standard warranty. ➤ A combi can produce a lot of steam vapor and heat when the door is opened quickly, so the hood should be sized to cover all or most of the door swing. A full-sized or roll- in combi should have a 60-inch deep hood at minimum. Some of the better models take operator safety into con- sideration and features an automated oven cavity evacua- tion system in which heat and humidity are automatically exhausted from the oven cooking cavity. This safeguards operators to prevent potential injury when opening the oven door at the conclusion of a cooking cycle. ➤ Unless the combi is one of the latest models with all controls accessible from the front, provide allowance for service access on the control side. The space doesn't need to be empty, but the equipment should be mobile and easy to move or access. ➤ Verify if your customer is looking for an Energy Star rating to achieve a rebate with their local energy supplier, meet LEED's standards, or reduce overall energy costs. Alto- Shaam, Convotherm and Rational all have combi ovens that are listed with Energy Star.
