After all, what dish does not begin as an experiment, with ingredients and cooking times and techniques all in flux until the chef finds the perfect flavor symphony and places every last component on a plate? But chefs are not alone in their love of experimentation, and in this issue, The Clever Root honors the spirit of adventure that lies at the heart of every experiment. From winemakers who tinker with pruning techniques (see page 40) to grocers who are always looking for new ways to give their guests the best experience (see page 74) to chefs and bartenders who decide to collaborate (see pages 36 and 48), this issue is an experiment- er's dream. When The Clever Root launched in the fall of 2015, it was a true experiment. No pub- lication had ever before jumped into writing about sommeliers and restaurants, farmers and winemakers, master distillers and master chefs and placed that content alongside cannabis. Nearly two years later, we're proud to call this experiment a success. The legalization of cannabis is something of an experiment in and of itself. The ques- tions have been on everyone's lips: How would recreational cannabis impact the economy in Colorado? What will the future of California's booming cannabis industry look like? How will bars and restaurants be affected by legal marijuana in Oregon? Through experimentation, we're beginning to discover some answers: A $105 million surplus in Colorado will benefit the state's schools; banking will be key to the industry's success in California (see page 84); and in Oregon, bars and restaurants seem to be doing just fine in the face of legal weed. Location intelligence company Foursquare recently conducted a survey of who was visit- ing dispensaries in Oregon and how their cannabis consumption affected their visits to local bars and restaurants. Data showed that dispensary visitors were 48% women and primarily Millennials, although nearly a quarter of visitors were over 55. Despite access to legal can- nabis, explains Foursquare's Editor-at-Large Sara Spagnolo, "nothing can take the place of getting out there and being with friends in a social setting. We have found that the sale of legal marijuana does not impact how likely a person is to visit a bar or restaurant." So whether you're experimenting with a new recipe, playing with a new product or looking to try cannabis for the first time since college, you'll find it all here in the pages of The Clever Root.
