f a l l 2 0 1 8 | 8 1 Huîtrerie Régis This tiny, all-white, delightful Left Bank restau- rant doesn't take reservations, so it's best to get there around 11:30 or 2:30 for lunch. Dinner is just as difficult and the menu is extremely limited: There's foie gras and sausage as well as prawns and sea urchins, but the main attrac- tion here is the oysters. The freshest and best available in Paris, they're trucked in daily from the Marenne- Oléron, which is located not far from Cognac on France's Atlantic coast. Behind the tiny bar, the proprietor dispenses bottles of Sancerre to accompany the mollusks. There's crusty bread and lovely butter as well as a cheese and apple tart for dessert, but I'd say you're better off just ordering another oyster platter. 3 Rue de Montfaucon, 6th Arrondissement, +01 44 41 10 07, huitrerie-regis.com PHOTO COURTESY OF HUÎTRERIE RÉGIS Bistrot Paul Bert If there's one place I recommend visiting while in Paris, it's this one. A bustling bistro full of people clearly enjoying themselves, Bistrot Paul Bert provides the perfect introductory Parisian food experience. Although the décor would make you think this restaurant has been around for decades, it's a relatively recent creation owned by wine- crazed Bertrand Auboyneau, who has other operations on the same street. There's a small wine bar as you enter, but the food is the focal point here. Displayed on a large blackboard and hefted around from table to table, the menu trends classic, but the meals are consistently exceptional due to excellent ingredients and extra care in the kitchen. There's steak frites, great duck confit, and a surprising number of excellent seafood dishes, which is unusual for a bistro. The ultimate dish, however, is steak au poivre—tender beef smothered in a thick, creamy sauce studded with black peppercorns. For dessert, try the Paris-Brest, a circular pastry filled with hazelnut buttercream. OMD (Oh mon Dieu)! 18 Rue Paul Bert, 11th Arrondissement, +01 43 72 24 01 The seafood plate at Huîtrerie Régis.
