Aer it has reached the desired flavor profile and alcohol content, which averages 6 percent, the cra beer is moved into the cooler room for carbonizing and chilling, explains Sullivan. e beer is served directly from the cooler tank to the tap. "Creating good cra beer takes science, math and a lile guesswork," says Sullivan. Montana law restricts how microbrews are sold, limiting sales to three glasses per customer per day. However, Big Spring Brewery's license allows the beer to be sold to the Central Feed Grilling Company, where it can be served with food from 11 a.m. to 11 p.m. Saturday through Sunday. "We offer grill-inspired, central Montana comfort food," says Brad McCardle restaurant manager. "Our goal is to be consistent, compliment what we have here in Lewistown, find our own niche and fit in without mimicking or copying what other restaurants already offer." e restaurant owns the historic building, built in 1916 as a, modern produce warehouse and later converted into a feed mill. e building is constructed of utilitarian dark red brick, timber and black steel beams with a central freight elevator going to three levels, which offer ample room for a board room, lounge, dining area, brewery and private event room. Big Spring Brewery's Blood Orange beer is served with street tacos as a lunch special at Central Feed Grilling Company. "We offer grill-inspired, central Montana comfort food," says Brad McCardle restaurant manager. Big Spring Brewery can be seen in the northeast corner of the Central Feed Grilling Company restaurant. The 15-barrel brewhouse is capable of fermenting 452 gallons of up to six different beers at a time, and the restaurant can offer single servings and fill growlers of up to 10 craft beers on tap.
