Under the True to Food umbrella, Signature Kitchen Suite designers created the next generation in wine storage offering specs and features guaranteeing an equal appreciation for the best red, white and sparkling varietals – as well as protection from wine's four biggest threats of light, vibration, and variations in both temperature and moisture levels. These product attributes include dark opaque glass doors with tap-on-glass controls to limit interior lighting; a linear compressor to ward off vibration; dual evaporators to maintain steady moderate humidity; and three (24-inch) or two (18-inch) independent temperature zones that can be set between 39 and 69 degrees Fahrenheit to ensure optimal conditions for any wine variety. Signature Kitchen Suite's obsessed product designers even used unfinished Beechwood for the interior shelving to eliminate any possibility of oils, odors or other wood byproducts altering the purity of the wine. WISDOM FROM FRANCE'S FIRST FAMILY OF WINE To support both its new wine columns and the programs at the Napa EDC, Signature Kitchen Suite has initiated a brand- wide focus on wine-centered cooking and the marriage between fine food and wine. At the core of this is a collaboration with Jean-Charles Boisset, son of one of France's "first families of wine" with wineries and operations spanning from Burgundy and the south of France to California's Napa Valley and the Russian River Valley. Boisset is the star of the next installment in Signature Kitchen Suite's acclaimed True to Food Films series profiling food artisans and craftsman who subscribe to a shared authentic philosophy. This latest episode, entitled "The Vintner," features Boisset discussing his multigenerational family commitment to winemaking and preservation. The series is hosted by Mark Bittman, former New York Times food columnist and best- selling author, and includes previous episodes "The Butcher," "The Fisherman" and "The Baker" all available on Signature Kitchen Suite's website and YouTube page. Boisset owns three of wine country's most established wineries: Raymond Vineyards, a five-generation winemaking operation with a specialty in luxury wines produced from organic and biodynamic farming techniques; DeLoach Vine- yards in the Russian River Valley, known as "American's Burgundy" for producing world-class Pinot Noir and Chardonnay; and Buena Vista Winery, California's first premium winery and the design inspiration for Signature Kitchen Suite's new cave- like wine columns. Additionally, early this year, Signature Kitchen Suite will be releasing the sixth episode in the series, "The Cheesemakers," featuring Mark Bittman discussing the intricacies of making cheese from raw milk with John Shuman and Marci Ebeling of Cascadia Creamery in Trout Lake, Washington.
