NOT YOUR ORDINARY EGGS
AND TOAST
Bacon and Eggs
INGREDIENTS:
• scrambled egg
• cooked bacon
• sautéed spinach greens
• sliced avocados
For the greens: Add olive oil to a medium frypan, sauté spinach
for 1-2 minutes or until tender and wilted. Season with sea salt
and black pepper.
To serve: Top toast with scrambled eggs, spinach, bacon, and
sliced avocado. Season with sea salt and black pepper and serve.
Southwestern
INGREDIENTS:
• smashed avocado (seasoned with salt, pepper, and lime juice)
• roasted tomato
• hardboiled egg
• red pepper flakes
• fresh lime
To serve: Spread toast with smashed avocado, roasted tomato,
and a hardboiled egg. Top with a sprinkle of red pepper flakes,
and a squeeze of fresh lime.
The Garden
INGREDIENTS:
• smashed avocado (seasoned with salt, pepper,
and lime juice)
• fried egg
• fresh garden veggies
• fresh herbs
To serve: Spread toast with smashed avocado, fried egg, fresh
vegetables. Sprinkle with fresh herbs and salt and pepper.
Caprese
INGREDIENTS:
• sliced avocados
• fresh tomatoes
• fresh basil
• poached eggs
• reduced balsamic vinegar
To serve: Layer toast with sliced avocados, fresh tomato,
fresh basil, and poached egg. Drizzle with balsamic vinegar.
