MEAT LOVERS PAN PIZZA I love putting fresh herbs into the dough. The specks of color give it a pretty finish and adding parmesan cheese into the dough gives it a little more saltiness and changes the texture of the finished product. INGREDIENTS: Dough • 2-3 cups all-purpose flour • 1 cup of warm water • 1 package instant yeast • 1 teaspoon salt • 2 teaspoons sugar • 1 tablespoon olive oil • ½ teaspoon each, dried oregano, basil, and Italian seasoning • ⅓ cup freshly grated parmesan Filling: • 1 pound assorted meats (Italian sausage, pepperoni, ham, chorizo, cooked bacon), really you can use whatever meat you want • 1 cup marinara sauce • sliced Roma tomatoes • chunks of soft fresh mozzarella or shredded mozzarella • your choice of cheese blend SiG MT 77 DIRECTIONS: 1. Place warm water in a bowl. Add yeast and sugar, mix well. Let rest for 5 minutes. 2. Start adding flour (at least one cup) before adding salt, then add cheese and herbs, then more flour, until the dough is not too sticky. 3. Knead the dough for 5 - 8 minutes... stretching and turning each time. It will get nice and elastic with a silky feel. 4. Put the oil in a large bowl, turn the dough ball over a couple of times in the oil to coat. 5. Cover the dough with a damp kitchen towel and let rise for at least 30 to 60 minutes. 6. Punch down, divide into 2 pieces, and roll out or press into your desired pizza pan of choice. 7. Preheat oven to 425° F. 8. Cover pizza crust with marinara sauce, top with meat, mozzarella, sliced tomatoes, and additional cheese. 9. Bake for 15 minutes or until crust is browned lightly and cheese is melted.
