SiG MT 72 SERVINGS:4 servings This Chicken Foil Packet is made with a Mexican flair, combining black beans, corn, and salsa! Cook on the grill, in the oven, or over the campfire for a delicious flavor-packed meal. INGREDIENTS: • 4 chicken breasts 7-8 oz each (cut into bite sized pieces if wanted) • 4 tsp Santa Fe seasoning or favorite taco seasoning • 15 oz black beans drained & rinsed • 2 cups whole kernel corn • 1 cup diced bell peppers any color • ¾ cup salsa • ½ - ¾ cup shredded Mexican cheese or Monterey jack • Cilantro, tomatoes, and jalapenos for garnish • salt & pepper to taste Santa Fe Seasoning • 1 tsp of kosher salt • ½ tsp freshly ground pepper • ½ tbsp of chili powder • ½ tsp of garlic powder • ½ tsp of onion powder • ¼ tsp of ground cumin • ½ tsp of smoked paprika DIRECTIONS: 1. Preheat the barbeque grill to medium-high heat or oven to 400°F. 2. Place four large pieces of foil on a work surface and spray each with cooking spray. 3. Place 1 chicken breast on each piece of foil and sprinkle both sides with seasoning. 4. Divide beans, corn, peppers, and salsa over top of chicken breasts. 5. Fold in the ends to seal each packet. Place packets on the grill, vegetable side down, for 10 minutes. 6. Flip packets over and grill an additional 10-12 minutes or until chicken is cooked through and reaches 165°F. 7. Place packets on a large baking pan. Carefully open packets and top with cheese. Place the baking pan back on the grill to melt the cheese. 8. Top as desired. 9. Serve as is, or slice chicken up and serve in tortilla shells. SANTA FE CHICKEN FOIL PACKETS
