Course Listings 2020-2021 Introduction to Meat Clerk Introduction to the retail meat environment, weight conversions, meat processing, inventory control, basic knife skills, packaging, stocking, and merchandising skills. Emphasis on accuracy, quality, and productivity. Prerequisites: None. MCP103 225 Clock Hours Meat Fabrication Reinforcement of skills for processing cuts of meat, including specialized cuts of meat. Course emphasizes sanitation, accuracy, quality, productivity, retail sales, and customer service. Prerequisites: None. MCP104 225 Clock Hours Merchandising Advanced cutting, wrapping, weighing, and displaying retail cuts of meat. Topics include sanitation, accuracy, quality control, productivity, retail sales, and customer service. Prerequisites: None. (MDC) MEDICAL ASSISTING MDC103 125 Clock Hours Introduction to Medical Assisting This course develops the foundation of healthcare through an understanding of anatomy and physiology, medical terminology and application of basic pathophysiology as it relates to an entry-level medical assisting. Medical terminology as it related to structures, functions, diseases, procedures, and diagnostic testing. Building and analyzing terms using word parts. Medical abbreviations, symbols and correct spelling and pronunciation. Basic first aid, CPR review, and emergency preparedness. Professionalism in healthcare to ensure students are ready to enter the professional workplace including etiquette, image, manners, communication, professional relationships, responsibility and accountability, respectfulness, and patient privacy. Empathy, compassion and emotional maturity specific to the healthcare setting. Focus on development of personal and professional communication skills and an understanding of how effective communication skills promote teamwork. Additional focus on intercultural communication strategies. Prerequisites: Program admission. MDC104 185 Clock Hours Fundamentals of Administrative Medical Assisting This course explores fundamental administrative procedures in various healthcare settings. Overview of the daily operations, principles and procedures for administrative skills including: medical record management, introduction to the electronic health record (EHR), and application of insurance, coding and billing. Basic administrative office policies, procedures, appointment scheduling, telephone etiquette, patient reception, financial practices, third party payers, health insurance, and basic understanding of medical billing and coding. Health organization structure, patient rights and quality care. Definition and importance of values, basic understanding of medical law and ethics. This course provides tools and strategies for gainful employment. Prerequisites: MDC103. 317
