"We serve certified Angus beef," says Frank. "Our baseball cut sirloin is probably our signature dish, but my favorite is the filet mignon." Other popular favorites are chicken fried steak and chicken fried chicken. "e chicken fried steaks are hand-cut off the boom round and hand-fed into a machine to tenderize them," explains Pagie. "We tried a lot of prepared chicken fried steaks, but we couldn't find any we liked, so Garre decided he'd make his own. ey do it all themselves." e same goes for the chicken fried chicken – the chicken is hand-breaded in an egg wash, buermilk, and seasoned cracker crumbs, says Pagie. e result is a golden-brown crunchy crust covering tender, juicy chicken meat, served with a hearty portion of creamy mashed potatoes and gravy. Dessert options include so-serve chocolate, vanilla, or swirl ice cream paired with a unique off-menu nightly special, such as crispy fried Oreos. "at's something that Garre wanted to try," says Pagie. "He watches cooking shows for inspiration." Built in 2017, the 1028 Steakhouse shares a roof with the three-lane Red Roof Bowling Alley and International Suites hotel, with seven themed suites honoring some of the world's most visited places, such as New York, Greece, Paris, Amsterdam, and San Francisco. Restaurant manager Tiffany Rowell pours drinks at the bar, designed with modern lighting and chrome accents giving it a clean, sleek appearance. The bar features five tap beers and a wide selection of liquor. Carr's signature dish, the Prime Rib, is the featured special every other weekend.
