But it took some time—and a circuitous route—to cultivate all things culinary. For seven years after culinary school, he dabbled in a few related ventures. "I thought I wanted to sell wine for a living. I worked for a catering company and was a chef in a Beverly Hills hotel," he recalls. "I really loved cooking but was not satisfied with the medium I was doing it in." Amid his jumping around, Henderson was driven by the desire to eventually have his own business. In 2004, while living in Los Angeles, he started a private chef company for photographers who did on-location photo shoots around the country. It was cooking out of motor homes—whether on the side of the road or in the middle of the desert—that began to shape his idea for a mobile food venue back in his hometown of Seattle.
