In addition to the well-known approaches, there is a variety of new flavor strategies under development. One successful strategy, at least in some cases, is to combine different flavor technologies with a synergetic combina- tion of intensive sweeteners. The use of complexing agents (e.g., cyclodextrins and ion-exchange resins) has also worked well. The study described here measured how well five different flavor options taste-masked the caffeine. Intensive sweeteners Intensive sweeteners enhance taste masking and com- pensate for the lack of sweetness in sugar-free chewing gums. As their name implies, these ingredients are much sweeter than sugar (200 to 60,000 times), and their use levels are limited by regulation. The intensive sweeteners commonly used in chewing gum are aspartame, acesulfame-K, and sucralose. Other intensive sweeteners are thaumatin and neohesperidin dihydrochalcone. Stevia, which was approved a few years ago, is also starting to be used, but it requires some for- mulation changes because of its own taste. Formulations used Five formulations, each with different flavor and intense sweetener combinations, were tested to evaluate how well they masked the taste of caffeine in chewing gum. Tables 3 to 7 list the ingredients and use levels.
