took over the kitchen at Tarpy's in April. Tasked with changing the longtime menu and culture of the iconic stonehouse restaurant known for bold American countr y food, Fisher stepped in clogs first. "It's tough re-creating something that has such history, and to inject new life and create new his- tory," he says. "I wanted to make the food I want- ed to make. Different than the norm." That's obvious throughout the menu. Start with the "Cowboy Crudo," a raw category high- lighted by Fisher's "surf and slurp"—Pacific oys- ters on the half shell, with horseradish and oxtail mignonette. Or raw American buffalo with whipped garlic, pickled celery, fried shallots and jalapeño oil. If you prefer cooked food, Fisher has those same oysters barbecued Carolina style, with charred scal- lions and sides of cornbread and bacon. Or have the buffalo as a high-end sloppy Joe. The menu is splattered with eye-opening items: Guinness-braised boar shoulder ; wood-fired "hooch" chicken with dino kale, harissa and salsa verde; and Creole shrimp with a side of creamy grits that Fisher says, "will change your life."
