black pepper); duck confit and collard greens;
and roasted cauliflower and Brussels sprouts
with bourbon syrup.
Fisher has launched a Sunday brunch menu
with items such as griddled donuts, pork chop
and eggs, blueberry flapjacks, and shaved pro-
sciutto with peaches.
"It's a bold, aggressive menu," says Fisher. "But
our diners are sophisticated. I know they will
love it.

Ventana Big Sur has hired Paul
Corsentino as executive chef. Most recently,
Corsentino was at The National in New York City
alongside Geoffrey Zakarian of "Iron Chef " fame.
Corsentino assisted Zakarian in winning the
Food Network's "The Next Iron Chef, Super
Chefs"… A number of chefs have tried to hit
the mark since Rocky Point on the coast
south of Carmel re-opened in March of 2013.
Now it's up to Soerke Peters of Basil
Seasonal Dining in Carmel to take over as
consulting chef. Peters has created a menu built
on local, organic and sustainable pro-
ducts…Carmel Belle has expanded its foot-
print in the Doud Arcade in downtown Carmel,
offering a full juice bar as well as new dinner
service…Ramsey Elmachtoub of Monterey
Bay Co. (next to Mundaka in Carmel) makes
an entirely edible and utterly delicious gluten-
free bagel using superstar Chef Thomas Keller's
Cup4Cup gluten-free flour.
