54 Homemade Dough for Baked Sandwiches This is a hardy sandwich that can be made ahead and frozen for those busy days when you are out in the field. Don't have all of these meats or cheese on hand? Not a problem, use whatever you have on hand. You like onions and peppers? Great, slice up some and put them on too! Personalize these to what your family likes. Yield: 4 loaves (8 slices each), 32 servings, 1 slice per serving. INGREDIENTS: • 4 loaves (1 lb each) frozen bread dough, thawed or bread recipe ( see below) • 1/2 lb thinly sliced deli salami • 1/2 lb thinly sliced deli ham • 1/2 lb thinly sliced pepperoni • 1/2 lb thinly sliced provolone cheese • 2 cups (8 ounces) shredded mozzarella cheese • 1/2 cup grated romano or parmesan cheese • 1 tbs garlic powder • 1 tbs dried oregano • 1 tsp dried parsley flakes • 1 tsp pepper • 1 egg yolk, beaten DIRECTIONS: 1. Let dough rise until doubled, according to package directions. Punch down. Roll each loaf into a 15-in. x 12-in. rectangle. Arrange a fourth of the salami, ham, pepperoni and provolone cheese over each rectangle. Sprinkle each with a fourth of the mozzarella cheese, Romano cheese, garlic powder, oregano, parsley and pepper. 2. Roll up each rectangle jelly-roll style, beginning with a long side. Seal seams and ends. Place seam side down on two greased baking sheets. Brush with egg yolk. 3. Bake at 350° for 25-30 minutes or until golden brown. Let stand for 5 minutes before slicing. Serve warm. Refrigerate leftovers. Three-Meat and Cheese Baked Bread Sandwich Yield: 4 loaves INGREDIENTS: • 1/2 tsp honey • 1 cup warm water (about 110 degrees) • 1 packet (2-1/4 tsp) active dry yeast (I like to use instant yeast) • 1/2 tsp olive oil, plus 1 tsp for oiling the bowl • 3/4 tsp kosher salt • 2-1/2 cups all-purpose flour, plus more if needed DIRECTIONS: 1. In the bowl of your mixer add the 1/2 teaspoon of honey. 2. Pour in 1 cup of warm water (115-120 degrees) and whisk. Sprinkle in the packet of yeast and let it sit and get all puffy. 3. Pour in a half teaspoon of olive oil, a half teaspoon of kosher salt and a cup of the flour. Mix adding the rest of the flour gradually. 4. Keep mixing until the dough pulls easily from the sides of the bowl. Add more flour if necessary (a couple tablespoons at a time). 5. Add a splash of olive oil to a large, clean bowl. 6. Form the dough into a ball and place it into the bowl. Toss the dough ball around and up the sides of the bowl to coat. 7. Cover with a towel and let the dough rise for an hour or until doubled in size. 8. Once the dough has risen, punch the dough down until deflated. Lightly flour a work surface and the dough ball and reshape it into 4 balls for the baked sandwiches. Proceed with baked sandwich recipe. farm406
