In answer to those questions, what's been "good" for this blossoming business is Enbär's focus on serving cocktails made with Montana liquor and beers from Montana breweries. "When you go around the state and taste what's coming out of Montana breweries and distilleries, we have people doing amazing work. We like to accentuate that and partner with those people," says Hallahan. For example, Enbär partners with Missoula's Montgomery Distillery to make a feature cocktail called the Juniper. An ode to the bar's name, the Juniper is a blueberry gin-based martini. Customers love it…the catch is the type of gin used in its creation. Another example is the wildly popular Enbeer, a juniper- based beer which can only be purchased on site at this time and is produced by the Jeremiah Johnson Brewing Co. Maura Wilson, the bar's mixologist, says, "I try to get at least one liquor from each distillery, so we can share the love on all of it. I have three le before I carry all 16 Montana distilleries." Synergy with Montana-made Companies The old-school vibe of the Speak Easy provided inspiration right down to the glassware. Hallahan says it was a 6 week journey of debate and research to ensure the size and appearance of each glass is historically accurate. Enbär best-sellers include the Juniper, the Old-Fashioned, and Enbar Fries served with a trio of sauces: spicy ketchup, bacon aioli, and beer mustard SiG MT 80
