YIELD: 6 SERVINGS
INGREDIENTS:
Biscuits:
• 2 cups almond flour
• 1 cup cheddar cheese
• 1 cup mozzarella cheese
• 1/4 teaspoon salt
• 1/4 teaspoon baking powder
• 4 tablespoons butter (cut into pieces)
• 2 eggs
• 1/2 cup heavy whipping cream
Sandwich:
• 6 scrambled or fried eggs (salt and pepper)
• 6–12 slices of cooked bacon
• handful of arugula
INSTRUCTIONS:
1. Mix all the dry biscuit ingredients together in a bowl. Cut in butter,
mixing with a fork or pastry cutter until butter is well incorporated.
Mix in the eggs and cream.
2. Divide into 6 balls. Place on a cookie sheet and press down slightly to
form a biscuit like shape. Bake at 375°F for about 20 minutes or until firm.
3. To assemble the sandwich, take biscuit and cut in half. Layer on scrambled
eggs, top with bacon and arugula.
