Nitro cold brew is now being distributed to more than 200 locations throughout New Mexico, and the company is preparing for national distri- bution. Nitro cold brew is a process of extraction in which the coffee is never heated. It is steeped in cold water for a long period of time then infused with nitrogen to create a unique texture and experience. Nitro cold brew was named the second best new coffee product at Coffee Fest Chicago 2015. Villa Myriam, the only New Mexico company that grows, imports, roasts and distributes coffee, is owned by brothers David and Juan Certain. The Certains launched their coffee company in 2011 and subsequently opened coffee shop The Brew by Villa Myriam in 2013, which celebrated its two- year anniversary in October 2015. The brothers grow the coffee beans on their grandfather's farm in Piendamo Cauca, Colombia, and then roast and distribute the coffee from their facility in Albuquerque, where nitro cold brew is also canned. Juan and David take pride in the fact that all of their coffee beans are grown on their grandfather's farm, and they know the exact origin of their coffee, as well as who picked it. "Nitro cold brew has a strong front presence of chocolate with toasted oat notes and a sweet molasses finish. We've worked very hard on getting the perfect texture, a smooth, rich and delicious cold brew," said Juan Certain, who is a certified Level Two Barista in the Baristas Guild of America, along with only 98 other people in the world that have completed the certification (and the only one in New Mexico). An example of healthy small-business growth, Villa Myriam is the recipi- ent of numerous coffee roasting and brewing awards and represents successful economic development practices in New Mexico. The company began opera- tions in the South Valley Economic Development Center Mixing Bowl kitch- en and quickly moved to its first location two months later. It supports living wage practices by paying its employees well about the federal minimum wage at USD $10.10 per hour. Additionally, the company won the Albuquerque THE Magazine Hot Plate award in 2014.
