of the rivers of Germany, vineyards line the steep ter-
races, making the most of the mitigating water tem-
perature. German vintners face unique challenges
working against a cool, northern climate, managing
harvests from a latitude that makes ripening fruit a
concerted effort.
Often facing south to capture the reflecting sunshine,
these challenging vineyards are managed and har-
vested almost exclusively by hand, much as they were
in Roman times. The best microclimates of Germany
rely on their famous slate—Blue Devonian in the Mo-
sel and red in the Rheingau— and schist soils to hold
the sun's heat, allowing the grapes to fully ripen.
