GALILEE is home to rich, well-drained soils, high elevation, cool breezes and diurnal shift ideally suited to grape growing. BORDEAUX varieties are popular in production of the red wines of Israel, there are few indigenous varietals that are planted and produce wine. IN NEGEV, Drip irrigation has made viticultural growth possible in this semi-arid desert region. Wine has been made 83 in Israel since Biblical times when Romans had occupied this portion of the Middle East. Although a relatively small country—about 5% of the size of California, to put it in perspective— Israel's north-to-south configuration offers a variety of altitudes and topographic changes, re- sulting in numerous microclimates and subzones.
