Take a trip with me to the beautiful Greek island of Santorini. Back in 2010, I spent a week on the majestic island and visited the Boutari Winery. The first thing that strikes you is the unique look of the vineyards. Local vine growers created a system to combat fierce Aegean winds and intense heat. The vineyards lie close to the ground, pruned in the shape of a basket. The soil is sandy, with scoria, lava and pumice stone—perfect for the amazing, aromatic white wines produced on the island. When I want to go back to watching the sunset, smelling the sweet salt air and feeling the warm Mediterranean breeze, I open a bottle of Boutari Santorini. The wine is made from 100 percent Assyrtiko, one of the noblest varieties of the Mediterranean. Assyrtiko accounts for 80 percent of Boutari's Santorini vineyards. The wine is aromatic, with grapefruit and fleshy citrus fruit, peach and green apple. It finishes refreshingly dry and crisp with medium body and integrated acidity.
