Then a few months ago, Fabrice and his wife Jennifer started an American steakhouse near Roux (for- merly Lokal). Carmel Valley Chophouse showcases indul- gences such as in-house aged beef, venison chops, Wagyu brisket, and bison burgers. "[Opening a steakhouse] is the worst busi- ness decision when it comes to bottom line," says Jennifer. "But it's what our neighbors asked for." The Rouxes filled a void left by the closure of Will's Fargo, "paying respect to the Valley and honoring our community," she says. Then word broke in December about a third restaurant, as they purchased longtime Pacific Grove favorite Fifi's Bistro Cafe. Finally, the endeavor "will pay tribute to Fabrice's homeland," says Jennifer, who predicts her chef-husband will channel his late grand- mother, who taught him to cook. The Rouxes recognize Fifi's legacy, and want to honor what Michele and Calvin Wilkes built over 32 years. As for the menu, "it's already fan- tastic," says Jennifer, who promises old favorites, with everything getting "a French Fabrice touch."
