CHEESE FOCUS La Casera and Robiola Camuna Topping almost every retailer's list are leaf-wrapped robiolas. From Piedmont's La Casera, a goat's milk robiola wrapped in chestnut leaves has sold briskly at The Cheese Shop in Carmel, Calif., and elsewhere. This fresh 12-ounce disk becomes creamier as it matures, and the leaf wrap imparts an herbaceous aroma. La Casera's Robiola Incavolata (wrapped in savoy cabbage leaves) had a promising state- side debut, but the FDA has since denied it entry, presumably out of food-safety concerns.
